Warming Banana Nut Porridge

Colder weather definitely makes me want to be cozy. But I especially love cozy, stormy winter mornings! Makes me want to lounge around in my PJ’s and read books all day! Stormy mornings also mean I want yummy warming foods that are comforting. So on cold mornings, this has become a favorite of mine!
Let’s Look at the Ingredients
Not only is it tasty, but it is hearty and filling and filled with live raw food nutrition if you use raw, unprocessed nuts! It’s a nourishing powerhouse, packed with wholesome ingredients to fuel your day.

Almonds, pecans, and cashews provide a blend of healthy fats, plant-based protein, and essential minerals like magnesium, zinc, and copper, supporting heart health, brain function, and energy production.

How To Make The Porridge
This recipe does require a little bit of planning and preparation the night before, but it’s definitely not hard…unless it’s “hard” to remember to do ahead of time! ~wink~wink~ But really it just requires remembering to measure out the nuts in a large bowl and covering them with water to soak overnight.
Then, the next morning you just need to rinse and drain the nuts and combine everything else in a blender until smooth, then warming it up. Easy enough, right?
So without further ado… Here is the recipe:

Banana Nut Porridge
Start your morning with this creamy, gluten-free breakfast porridge! Made with coconut milk, almonds, pecans, cashews, and bananas, it’s a warm, nourishing, and energizing way to fuel your day.
Ingredients
- 1 cup raw, unsalted almonds
- 1 cup raw, unsalted pecans
- 1 cup raw, unsalted cashews
- 4 cups coconut milk
- 4 tsp cinnamon or pumpkin pie spice
- 2 ripe bananas
- pinch of sea salt
Instructions
1. Place nuts in a large bowl and cover with just enough water to cover it by at least 1 inch. Let soak overnight.
2. In the morning, drain the nuts and rinse them in a colander a few times until the water runs clear.
3. Add the soaked nuts to a high speed blender and add the rest of the ingredients. Add more or less coconut milk to get desired consistency. Prepare in batches if needed. Process until smooth.
4. Pour into a pan and gently warm on the stove until it is gently heated through.
5. Top with additional chopped nuts and raisins, or diced apples, or fruit of choice.
